In this hands-on workshop, participants will learn the science, safety, and health benefits of fermented food, including ways to include these nutritious preserves in your meals.

We'll make a jar of simple sauerkraut together in class for students to take home, along with a booklet that recaps the process and includes recipes to encourage participants on their fermentation adventures after the workshop.

About the Facilitator
Kim Bialkoski has loved cooking and gardening since she was a child, and those passions came together many years ago, when she first taught herself how to pickle, jam, and preserve the labours of the summer's work. She went on to launch Flora & Farmer, a gourmet preserves company, as well as Preserve, a storefront and facility dedicated to the production and sale of her preserves, as well as dozens of other local food companies' products. After 10 years and many, many thousands of jars, she recently hung up her apron and has been spending her days digging in the garden, riding her bike, and enjoying the local music scene.
