Our biomes are home to beautiful, rich, and fascinating plants — from mighty palm trees to the smallest succulents. But did you know that some of these plants make their way into your favourite beverages and dishes at Gather Craft Kitchen & Bar?

Prairie Picnic, our newest display at The Leaf, celebrates the foods that nourish us emotionally and ceremonially. Read on to learn about a few of the plants that grow in our Heather and Hartley Richardson Tropical Biome and Mediterranean biomes that help feed us throughout the year!

Heather and Hartley Richardson Tropical Biome Plants

Allspice Berries
Native to the Caribbean, Central America, and Mexico, allspice is an evergreen tree grown for its aromatic berries. Its flavour combines hints of cinnamon, cloves, nutmeg, and black pepper, which is exactly how it got its name.

While our trees don't bear berries, the leaves from the tree are steeped in sugar to create a spiced syrup used in our Berry Rum Punch cocktail. Learn more about the process on Gather's Instagram!

Cavendish Bananas
Did you know that Cavendish bananas are one of the most common types of bananas and due to their inability to reproduce into new species of bananas, they are created as identical clones of one another? When they grow, they grow together as a bunch and only bear fruit once in their lifetime.

Once our horticultural team is ready to harvest the bunch, our bananas are transformed into a silky crème anglaise used in our Banana Bread French Toast.

Mediterranean Biome Plants

Rosemary, Mint & Thyme
After our team trims the leaves from these plants, they're used to garnish dishes — fresh, dried, or even as an element in smoked preparations.

Olive Leaves
Once harvested from the biome, the leaves are dried and used to smoke sunflower seeds for our salad dressings.
